Maximo Graesse is a Policy Specialist at ProVeg Germany. His perspective on food systems transformation has been shaped by a unique background as a chef, economist, researcher, and entrepreneur. He spent many years in Scandinavia building and scaling regional supply networks, gaining firsthand insight into the systemic and behavioural barriers to scaling plant-based value chains. At ProVeg, he applies a living lab approach to tackle the cold-start problem of supply and demand, exploring how every actor can find the agency and capacity to act. He focuses on fostering the mutual understanding, risk-sharing, and collective action needed to move the system forward.
